Paleo chocolate peanut banana bread

Nutty and not-to-sweet, this chocolate peanut banana bread recipe takes the classic peanut butter chocolate flavour combination and bakes it into a loaf. Reese's cups banana bread, anyone? Paleo, gluten-free and sugar-free.

Ingredients

  • 3 banana mashed
  • 3 egg large
  • 1 tablespoon vanilla extract
  • 15 liquid sweetener drops or 1 tablespoon honey
  • ¼ cup coconut oil
  • 2 cups almond flour
  • ½ teaspoon salt sea salt
  • 1 teaspoon baking soda
  • ¼ cup peanut chopped
  • ¼ cup chocolate chips
  • 20 g chocolate for drizzling, melted

Instructions

  1. Preheat oven to 350F.
  2. Roast peanuts in oven for 5 mins, taking care not to burn.
  3. Pulse together bananas, eggs, vanilla, liquid sweetener, and coconut oil in a food processor
  4. Pulse in almond flour, salt, and baking soda
  5. Pour batter into a greased and lined loaf pan
  6. Bake at 350°F for one hour
  7. Let cool for 1 hour. For the ultimate treat, drizzle with melted chocolate on top.
