  • 1 lb. chicken breast tenders
  • 1/2 cup almond flour more if needed
  • 1 egg
  • kosher salt to taste
  • black pepper to taste
  • 2 tablespoons extra-virgin olive oil
For the Honey Mustard Sauce:
  • 1/4 cup yellow mustard
  • 1/4 cup honey

    Cup of Yum
  1. Preheat the oven to 450 degrees F.
  2. Drizzle the two tablespoons olive oil on a rimmed baking sheet.
  3. Beat the egg in a shallow bowl. Season with salt and pepper.
  4. Mix the almond flour (1/2 cup) with more salt and pepper in another shallow bowl.
  5. Coat each chicken tender in egg mixture, followed by the almond flour mixture, and place on oiled baking sheet.
  6. Bake for 12 minutes, flip, and bake for another 12 minutes until golden brown.

Notes

  • The honey mustard sauce is Paleo compliant, but not Whole30 compliant, since it contains honey. Use an alternative dipping sauce, or none at all, for a whole30 compliant recipe.
  • For a low-carb version, I recommend omitting the honey mustard sauce, which will take the carb count down to 4g per serving.
  • The provided nutrition information does not include any added sodium from seasoning to taste, any optional ingredients, and it does not take brands into account. Feel free to calculate it yourself using this calculator or by adding the recipe to Yummly.
