Paleo Protein Bars Recipe
These soft and chewy one-bowl protein bars are the perfect healthy, on-the-go snack.
Ingredients
- coconut oil for greasing pan
- 1/2 cup almond butter 120 grams
- 1/4 cup honey
- 1 egg large
- 1 egg large, yolk
- 1/2 cup protein powder grass-fed, vanilla
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
Instructions
- Preheat your oven to 325℉ and rub an 8×8-inch pan with coconut oil. Set aside.
- In a large, microwave-safe bowl, melt the almond butter and honey until the almond butter is soft and creamy, about 1 minute.
- Whisk in the egg and egg yolk until well combined and the almond butter begins to thicken. Stir in the protein powder, salt, and baking soda. Mix until well combined.
- Pour the mixture into the prepared pan and press out evenly. If your mixture is sticky, rub your fingers with some coconut oil; this should help spread it out easily.
- Bake until a toothpick inserted in the center of the bars comes out clean and the edges are golden brown, about 11-13 minutes. Do not overbake, as you want them soft.
- Cool in the pan until room temperature, slice into bars, and DEVOUR.
