Paleo Protein Bars Recipe

These soft and chewy one-bowl protein bars are the perfect healthy, on-the-go snack.

Ingredients

  • coconut oil for greasing pan
  • 1/2 cup almond butter 120 grams
  • 1/4 cup honey
  • 1 large egg
  • 1 large egg yolk
  • 1/2 cup grass-fed vanilla protein powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda

  1. Preheat your oven to 325℉ and rub an 8×8-inch pan with coconut oil. Set aside.
  2. In a large, microwave-safe bowl, melt the almond butter and honey until the almond butter is soft and creamy, about 1 minute.
  3. Whisk in the egg and egg yolk until well combined and the almond butter begins to thicken. Stir in the protein powder, salt, and baking soda. Mix until well combined.
  4. Pour the mixture into the prepared pan and press out evenly. If your mixture is sticky, rub your fingers with some coconut oil; this should help spread it out easily.
  5. Bake until a toothpick inserted in the center of the bars comes out clean and the edges are golden brown, about 11-13 minutes. Do not overbake, as you want them soft.
  6. Cool in the pan until room temperature, slice into bars, and DEVOUR.
