Pan Bagnat

Pan bagnat is a Niçois sandwich with ingredients similar to Niçoise salad, which includes, among other things, tuna and raw vegetables.

Ingredients

  • sourdough bread about 8 inches / 20 cm in diameter, or round country bread
  • 1 clove garlic
  • 1 tomato , thinly sliced
  • 1 scallion , chopped
  • ½ green bell pepper , cut into strips
  • 1 egg cut into slices, hard-boiled
  • lima beans optional, a few
  • 1 artichoke hearts cut into thin slices, poivrade
  • 3 radish thinly sliced
  • 6 black olives , pitted
  • 2 oz. tuna in olive oil, canned filet
  • 2 salted anchovy fillets
  • 3 basil leaves
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon vinegar , optional
  • salt fine
  • black pepper , freshly ground

Instructions

  1. Cut the bread in half, leaving a larger volume at the bottom.
  2. Remove the excess crumb from the bottom part.
  3. Rub both parts of the bread with garlic.
  4. Soak both parts of the bread with the olive oil, as well as the vinegar (optional).
  5. Season with salt and pepper.
  6. First place the tomato slices on the bottom of the bread. add the radishes, scallion, hard-boiled egg, lima beans (optional), green bell pepper, artichoke heart, tuna and anchovy filets.
  7. Add the basil leaves and pitted black olives.
  8. Add salt and pepper if necessary, and place the upper part of the bread, pressing firmly on it to pack the ingredients inside the pan bagnat.
  9. Enjoy immediately.
