Ingredients

  • 2 pounds sweet potatoes , peeled and cut into 1-2 inch cubes
  • 2 tablespoons unsalted butter
  • 1/4 cup honey
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon coarse sea salt
  • Dash ground black pepper

Instructions

    Cup of Yum
  1. Preheat oven to 350°F.
  2. Heat a large ovenproof skillet (I prefer cast iron) over medium-high heat.
  3. Add the sweet potatoes and butter, allow to sear on all sides until lightly brown and crust develops. Potatoes will not be fully cooked, but fairly browned.
  4. Toss with the honey, cinnamon, salt and pepper.
  5. Transfer entire skillet to the oven to finish cooking. Bake for 15-20 minutes or until you can easily pierce a sweet potato cube.
  6. Remove and serve hot!
