Ingredients

  • 2 boneless skinless chicken breasts (about 1 pound total)
  • 1/2 to 1 teaspoon coarse salt
  • 1/4 teaspoon garlic powder
  • black pepper to taste
  • 1 tablespoon olive oil

  1. Pound the chicken breasts to an even 1-inch thickness using a meat mallet or rolling pin. This ensures even cooking.
  2. Season both sides of the chicken breasts with coarse salt, garlic powder, and black pepper to taste.
  3. Heat the olive oil in a large skillet over medium-high heat until hot but not smoking.
  4. Place the chicken in the skillet and cook for 4–5 minutes on one side without moving it, to get a good sear.
  5. Flip the chicken breasts over and cook for an additional 4–5 minutes, or until the internal temperature reaches 165˚F.
