Pancit Bihon [Filipino-Inspired Rice Noodles]

Pancit Bihon features rice noodles stir-fried with vegetables such as onion, garlic, celery, carrot, and tofu or seitan for a hearty plant-based dish. The noodles absorb seasoned vegetable broth flavored with soy sauces and mushroom soy for depth. The texture is tender with a slight bite, balanced by the savory and tangy notes delivered by lemon garnish. This Filipino-inspired recipe emphasizes familiar stir-fry techniques and uses available proteins and vegetables.
