Panera Bread Fuji Apple Salad

Ingredients
Salad
- 6 cups romaine lettuce chopped
- 2 cups arugula baby
- 2 cups chicken grilled, sliced
- ⅓ small red onion thinly sliced
- 1 cup pecan halves
- 1 ¾ cup apple crispy, not soft, dehydrated slices
- ¾ cup gorgonzola cheese crumbled
- 2 Roma tomato
Dressing
- ½ cup olive oil
- ¼ cup white wine vinegar
- ½ cup honey
- 3 tablespoons apple juice not from concentrate, 100%
- ½ teaspoon salt
- ⅓ teaspoon onion powder
- ¼ teaspoon garlic powder
Instructions
- Place salad dressing ingredients in a blender. Blend for 30 seconds.
- Pour into a glass jar and refrigerate for at least 30 minutes.
- Assemble all salad ingredients in a large bowl.
- Pour dressing over the salad and toss or serve on the side.
Notes
- Make the dressing up to 3 days ahead of time for a quick lunch.
- To take the edge off the taste of the red onions, soak them in cold water for 10 minutes.
- Salad's don't keep well in the fridge, so try to eat leftovers by the next day.
