Pannukakku

Pannukakku is the traditional Finnish version of pancake, baked in the oven and without a leavening agent.

Ingredients

  • 4 eggs
  • 4 tablespoons vanilla sugar
  • 3 cups whole milk
  • ¼ teaspoon salt
  • 1¾ cups all-purpose flour , sifted
  • 4 tablespoons butter , melted

Instructions

  1. Preheat the convection oven to 440 F (225°C).
  2. In the bowl of a stand mixer, whisk the eggs and sugar for 3 minutes.
  3. Add the milk, and salt and mix all the ingredients until well combined.
  4. Gradually add the flour, then the butter and mix the batter until getting a smooth consistency without lumps.
  5. If necessary, mix the contents of the bowl with the hand blender to obtain a smooth texture.
  6. Cover the batter and let it rest for 45 minutes at room temperature.
  7. Line the baking pan with lightly greased parchment paper, pour in the batter and put in the oven.
  8. Cook for 25 to 30 minutes.
  9. Let cool and serve with jam and/or cream.
