Paprika Chicken

Ingredients

  • 1/2 tablespoon paprika
  • 1/2 tablespoon mustard
  • 1/2 tablespoon chicken seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound chicken tenderloin
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 prig rosemary
  • rice for serving, cooked
  • 1/2 lemon optional, for serving

Instructions

  1. In a medium bowl, mix paprika, mustard, chicken seasoning, salt, and pepper.
  2. Coat the tenderloin chicken pieces with the spice mix on all sides.
  3. Heat olive oil in a large skillet over medium heat. Add the chicken, garlic clove, and rosemary sprig. Cook for 5 minutes.
  4. Turn the chicken over and cook for another 5 minutes.
  5. Remove chicken from skillet and let rest for a few minutes. Serve over cooked rice with a lemon slice on the side.

Notes

  • Let the chicken rest for 5 minutes after cooking to allow the juices to redistribute and for the residual heat to finish off the chicken.
  • Sear the chicken in a pan on HIGH heat before baking to give it a crust and color. It will also help lock in the juices.
  • Deglaze the pan after cooking by using wine, chicken broth, or water. Add the fond (what you scrape off the pan) as a juice to the finished dish.
