Ingredients

  • 2 1/2 pounds (1.1kg) potatoes peeled
  • 2 tablespoons butter
  • 1/4 cup heavy cream
  • 15 oz (425g) pumpkin
  • 2 tablespoons maple syrup or to taste
  • salt to taste
  • freshly ground black pepper
  • 1/3 cup Parmesan Cheese
  • 1 lice Bacon cut into small pieces

  1. Place the potatoes in a large pot and cover them with water. Bring to a boil, then reduce the heat to medium-low and cook the potatoes for 20 minutes, or until they are completely tender. Drain the water.
  2. Preheat the oven to 350°F (175°C). Mash the potatoes and stir in the remaining ingredients until smooth. Taste and adjust the seasonings as needed.
  3. Transfer the mashed potatoes to a baking dish and top with Parmesan cheese. Bake until the surface turns golden brown, about 15 minutes. Meanwhile, pan-fry the bacon bits until crispy.
  4. Remove from the oven and top with the bacon bits. Serve warm.
