Ingredients
- 1 lb chicken breast cut into 1 inch pieces
- 1 tablespoon olive oil
- 1/4 cup flour
- 1 egg
- 1 cup Panko bread crumbs
- 1/2 cup parmesan cheese fresh grated
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 425 degrees F. Brush a metal baking sheet with 1 tablespoon olive oil, set aside.
- Season chicken well with salt and pepper, set aside.
- Whisk together panko breadcrumbs, parmesan cheese, salt, pepper, oregano and garlic powder in a shallow dish.
- In a second shallow dish, whisk the egg.
- In a third shallow dish, add the 1/4 cup of flour.
- One by one, add a piece of chicken to the flour, toss to coat. Shake off excess flour, then dip in egg. Allow excess to drip off, then toss in the panko breadcrumb mixture. Shake off excess and then place on the oiled baking sheet.
- Repeat this process until all pieces of chicken are coated.
- Bake chicken for 7 minutes, then remove from oven and flip. Return to the oven and bake for another 7 minutes, or until chicken is cooked though.
