Parmesan Broccoli with Pine Nuts

Ingredients

  • 1 lb. broccoli chopped and stemmed
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons pine nuts
  • 3 tablespoons grated parmesan
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F.
  2. Chop the broccoli and place on a small rimmed sheet pan or a baking dish.
  3. Toss the broccoli with the oil, then season with salt and pepper.
  4. Top with the pine nuts and parmesan.
  5. Bake in the preheated oven for 20-25 minutes (or until the topping is browned and crispy.)
  6. Enjoy warm!
