Parmesan Crusted Zucchini Recipe

Delicious and Healthy Baked Parmesan Zucchini. These spears are crusted in Parmesan cheese and baked to perfection, making them a great side dish for any meal.

Ingredients

  • 3 medium zucchinis
  • 1/2 cup Parmesan Cheese grated
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350
  2. Cut the zucchinis in quarters, length-wise. Set aside.
  3. Line a baking sheet with foil and grease with cooking spray.
  4. Place zucchinis on the baking sheet and drizzle with olive oil.
  5. Sprinkle on grated Parmesan cheese (and any other spices desired).
  6. Top with a little bit of salt and pepper.
  7. Bake for 12-14 minutes.
  8. Broil for the last 2 minutes until the cheese is more browned.
