Ingredients
- 2 pounds red potatoes, cut into 1 inch pieces
- 2 tablespoons olive oil
- ½ cup grated Parmesan cheese
- 3 minced garlic cloves
- 1 tablespoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon pepper
- Aluminum foil
- Chopped parsley for garnish
- freshly grated Parmesan cheese
Instructions
- In a large bowl add 2 pounds red potatoes, cut into 1 inch pieces , 2 tablespoons olive oil, ½ cup grated parmesan cheese, 3 minced garlic cloves, 1 tablespoon Italian seasoning, ¼ teaspoon salt and ¼ teaspoon pepper. Toss until coated.
- On a sheet of aluminum foil add the potatoes. Fold in the sides to create a foil pack and seal the edges. Place on the grill on medium high heat and grill for 20-30 minutes or until tender.
- Top with chopped parsley for garnish and freshly grated parmesan cheese.
