Ingredients
- 2 lbs (1kg) sweet potatoes
- 1 tablespoon olive oil
- 1 Pinch salt
- 3 tablespoons grated Parmesan cheese
- Chopped Parsley Leaves for garnishing
Instructions
- Peel and rinse the sweet potatoes, then cut them into lengthwise strips. Soak the strips in water for 30 minutes. Drain the water and pat them dry with paper towels. Place the sweet potatoes in a large bowl, add olive oil and salt, and set aside.
- Preheat the air fryer to 330°F (165°C). Place the sweet potatoes in the cooking basket and cook for 5 minutes, or until crisp. Remove them from the basket and allow them to cool on a wire rack. Increase the temperature to 390°F (198°C), return the sweet potatoes to the basket, and cook for 10-15 minutes.
- Transfer the sweet potato fries from the air fryer and sprinkle Parmesan cheese over them. Toss gently to combine, then garnish with parsley. Serve immediately.
