Ingredients

  • 1 pommes frites recipe
  • 1/2 cup Parmesan Cheese grated
  • 1/4 cup white truffle oil
  • 1 tablespoon parsley chopped, fresh
  • salt sea salt and fresh cracked, to taste
  • black pepper sea salt and fresh cracked, to taste

Instructions

  1. Prepare the pommes frites according to the recipe.
  2. Once the fries are cooked strain from the oil and toss in a large bowl with the Parmesan cheese, truffle oil, parsley, and salt and pepper and serve.

Notes

  • These fries are best eaten immediately after preparation for crispness and flavor.
  • Leftovers can be refrigerated up to three days and reheated in the oven or by quick re-frying to regain crisp texture.
  • Vegetable, canola, or peanut oil is recommended for frying, though traditional pommes frites use rendered beef fat.
