Parmesan Truffle Fries Recipe
Parmesan Truffle Fries elevate classic pommes frites by tossing them hot from the fryer with grated Parmesan cheese, white truffle oil, fresh parsley, salt, and pepper. The fries develop a crisp exterior with a rich, earthy aroma from the truffle oil and a salty, cheesy finish. These fries are best enjoyed immediately to retain their crisp texture and fragrant topping.
Ingredients
- 1 pommes frites recipe
- 1/2 cup Parmesan Cheese grated
- 1/4 cup white truffle oil
- 1 tablespoon parsley chopped, fresh
- salt sea salt and fresh cracked, to taste
- black pepper sea salt and fresh cracked, to taste
Instructions
- Prepare the pommes frites according to the recipe.
- Once the fries are cooked strain from the oil and toss in a large bowl with the Parmesan cheese, truffle oil, parsley, and salt and pepper and serve.
Notes
- These fries are best eaten immediately after preparation for crispness and flavor.
- Leftovers can be refrigerated up to three days and reheated in the oven or by quick re-frying to regain crisp texture.
- Vegetable, canola, or peanut oil is recommended for frying, though traditional pommes frites use rendered beef fat.
- Adjust the thickness of fries to preference, cooking a minute or two longer for extra crispness.
- Serve with aioli or comeback sauce to complement the truffle and Parmesan flavors.
