Parsley Butter Potatoes

Delicious and buttery potatoes with parsley that are a great side to many meat dishes

Ingredients

  • 2 ½ lb potatoes
  • water enough to cover potatoes in pot
  • salt for cooking
  • 2 tbsp butter
  • ½ tsp salt or to taste
  • 1 bunch fresh parsley (optional, for garnish)

Instructions

  1. Peel potatoes, cut into chunks and place into a medium-sized pot covering with water.
  2. Bring potatoes to boil and salt the water generously. Reduce the heat a bit so the water doesn't run over and cook partially covered for 15-20 minutes.
  3. Meanwhile, wash and chop the parsley and prepare the butter.
  4. Once the potatoes are done, and a fork piercing a potato goes through easily, drain the potatoes.
  5. Add the chopped parsley, salt, and butter to the cooked potatoes. Gently mix everything together taking care not to smash the potatoes.
  6. Serve hot.

Notes

  • - Note if the potatoes are chopped into smaller pieces they will require less time for cooking.
