Parsnip Fries

Slightly sweet, earthy, and crunchy Parsnip Fries can substitute French fries any day!

Ingredients

  • 2 parsnip about 1¾ pounds, large
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch (or tapioca starch)
  • seasoning salt
  • salt

Instructions

  1. Preheat your oven to 400°F.
  2. Peel the parsnips and slice them into ¼-inch thick strips. Toss parsnips with the olive oil in a medium bowl, then toss with the cornstarch (or tapioca starch) until well combined.
  3. Spread parsnip fries in one layer on a baking sheet, using 2 sheets if necessary, making sure to leave room between each fry. Sprinkle with seasoning salt and regular salt.
  4. Bake for 10 minutes. Then flip the parsnip fries, sprinkle a bit more seasoning salt over them, and bake for another 7-15 minutes until golden and crispy.
  5. Serve hot with preferred dipping sauce, such as ketchup, barbecue sauce, or aioli.
