Pasta Da Vinci (Cheesecake Factory Copycat)

Pasta Da Vinci is a hearty pasta dish made with chicken, shiitake mushrooms and a creamy Madeira wine sauce! There is so much to love about this dish but one of the best things about is that it is so easy to make at home. You can have a restaurant quality meal at home in just 35 minutes.

Ingredients

  • 1 box penne pasta (or dry pasta of choice, about 450 grams)
Chicken
  • 1 tablespoon butter
  • 4 boneless skinless chicken breast (approximately 1-1.5 pounds)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
Pasta Sauce
  • 2 cups Shiitake mushrooms (approximately 1-1.5 pounds, or cremini, button or white mushrooms)
  • 1 medium red onion (diced into bite sized pieces)
  • 4 cloves garlic (minced)
  • ¾ cup Madeira wine (or Marsala wine)
  • 1 cup chicken broth
  • ¼ cup sour cream
  • ½ cup cream
  • ½ cup Parmesan Cheese
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon pepper (to taste)
Garnish
  • Parmesan Cheese
  • fresh parsley

Instructions

  1. Cook the penne pasta al dente per the package directions. Drain and set aside while you prepare the sauce.
  2. Slice the chicken breast into bite sized pieces and season with the salt and pepper.
  3. In a large frying pan or skillet on medium-high heat melt the butter. Add the chicken and pan fry for 5-6 minutes. Flip the chicken and pan fry for an additional 5-6 minutes, or until cooked through. Remove the chicken from the pan.
  4. Add the mushrooms, diced onion, and minced garlic to the pan. Sauté until tender, about 8-10 minutes.
  5. Deglaze the pan by pouring in the wine and using the spatula to scrape any browned bits off the bottom of the pan.
  6. Add in the chicken broth, bring to a simmer and reduce until slightly thickened.
  7. Reduce the heat to low, add in the sour cream, heavy cream, and parmesan cheese. Stir until evenly combined.
  8. Add the chicken and pasta to the pan, mix until evenly coated. Season to taste with the additional salt and pepper as needed.
  9. Serve topped with additional parmesan cheese and enjoy!
