Ingredients
- 2 tablespoons olive oil
- ½ large onion diced
- 1 lb ditalini or other small shape pasta
- 4 cups chicken broth
- 1 lb frozen peas
- pepper
- 1 cup Romano cheese grated
- fresh basil for garnish
Instructions
- In a pot heat oil over medium heat. Once heated add the onion and cook for about 4-5 minutes until they’re starting to become tender and translucent.
- Add chicken broth, frozen peas, and a generous pinch of pepper. Bring to a boil. Once boiling add the pasta and reduce heat to medium so the pasta cooks at a moderate simmer which will help the liquid evaporate.
- After around 7-8 minutes most of the chicken broth should be absorbed and the pasta should be al dente. Remove from the heat and stir in parmesan cheese and basil. Serve immediately.
