Pasta Gremolata

Ingredients

  • ½ cup parsley minced
  • 6 cloves garlic minced
  • lemon plus the juice of 1 lemon, coarsely grated zest of 2
  • ¼ cup extra-virgin olive oil
  • kosher salt to taste, freshly ground
  • black pepper to taste, freshly ground
  • 1 pound pasta

Instructions

  1. In a bowl combine the parsley, garlic, lemon zest and lemon juice. Stir to combine. Season with salt, pepper and olive oil.
  2. Cook the pasta until al dente. Drain and set aside.
  3. In a large bowl, toss the gremolata with the pasta until well coated. Serve immediately.

Notes

  • You can also use a blender to make the gremolata, if you prefer.
