Pasta With Lemon Cream Sauce

Ingredients

  • 1 pound Spaghetti
  • 2 tablespoons butter
  • 1 shallot minced, see note
  • 2 cloves garlic minced
  • 1 ½ cups chicken broth
  • 3 tablespoons cream
  • Juice from 1 lemon
  • 2 tablespoons Parmesan Cheese grated
  • salt and pepper to taste
  • 2 tablespoons fresh parsley chopped

  1. Boil pasta water and cook pasta until al dente (cook while prepping sauce).
  2. Melt butter in a large skillet. Add shallot and cook until soft and translucent. 
  3. Add garlic and cook until fragrant, about 1 minute.
  4. Add chicken broth to deglaze the pan and simmer for about 5-8 minutes until the sauce is reduced by about one third or one half and is slightly thickened.
  5. Add cream, whisking until heated through.
  6. Add lemon juice, whisking until heated through.
  7. Turn off the heat. Add the parmesan cheese, stir to combine. 
  8. Add salt and pepper, adjust to taste.
  9. Toss with cooked pasta and sprinkle with fresh parsley.

Notes

  •  Use any leftover sauce as a dip for breadsticks or a topping for baked potatoes—it’s surprisingly versatile!
  •  This pasta with lemon cream sauce pairs beautifully with a crisp white wine, like Sauvignon Blanc, to complement the citrus notes.
  •  Add a sprinkle of grated cheese or a handful of peas to make it even more appealing to little ones.
  • Long pasta shapes like linguine or fettuccine work best here, as they allow the sauce to cling to every strand.
