Pasta with Roasted Tomatoes and Sausage

Ingredients

  • 2 beefsteak tomato
  • 2 cloves garlic
  • 2 Tablespoon olive oil
  • salt to taste
  • black pepper to taste
  • 2 links Italian sausage hot
  • pasta cooked
  • 3 cup spinach

Instructions

  1. Heat oven 450.
  2. Chop the tomatoes and garlic, and toss with the olive oil and salt and pepper. Put them on a cookie sheet and roast for 20 minutes
  3. After 20 minutes add the sausage to the oven, continue to roast both the tomato mixture and sausage for 25 minutes more.
  4. Meanwhile cook the pasta, and reserve 1/2 cup of cooking liquid.
  5. Slice the sausage and combine the sausage, tomato mixture, reserved liquid and spinach.
