Pastellaki

Pastellaki is a deliciously crunchy traditional candy from Cyprus, that is prepared with sesame seeds and peanuts.

Ingredients

  • 1¼ cup peanuts unsalted, with skin
  • 1¼ cup sugar
  • 1½ tablespoon honey
  • ¼ cup water
  • 1 teaspoon vinegar
  • ½ teaspoon vanilla extract
  • 2 tablespoons sesame seed golden
  • 2 tablespoons white sesame seeds

Instructions

  1. Put the water, sugar, vanilla and honey in a heavy saucepan, combine ingredients, stirring once.
  2. Bring to a boil.
  3. Do not stir. You may tilt the pan by holding the handle, but at this stage of the recipe, do not put a spoon in the mixture.
  4. Immerse the thermometer and when the mixture reaches 250 F / 120˚C (about 10 minutes after boiling over medium heat) and becomes slightly amber, the caramel is ready.
  5. Add vinegar and stir.
  6. Add peanuts and sesame seeds.
  7. Mix and leave on the stove, stirring regularly.
  8. The syrup will crystallize and form as white sand around peanuts.
  9. At this point, you shouldn't stop stirring.
  10. Increase the heat to medium / high. Granulated sugar will brown and melt.
  11. When the mixture reaches a beautiful reddish color, quickly pour onto a tray covered with lightly greased parchment paper and let cool.
  12. Coarsely chop the pieces into brittles.
