    Cup of Yum
  1. In a Dutch oven, heat two tablespoons of olive oil and fry the onion until translucent.
  2. Add garlic and chili peppers. When the garlic is lightly brown, remove the pot from the heat and add the paprika. Mix well and put the pot back on the stove over low heat.
  3. Add the tomatoes immediately and cook on low heat for 20 minutes, stirring regularly. Add sugar and salt.
  4. Dissolve the flour in ½ cup (100 ml) of water and pour the mixture into the sauce. Mix well and finally add the chicken broth (or ham broth). Continue cooking on low heat for 20 minutes.
  5. Remove from heat and let stand for 10 minutes before adding the sherry vinegar.
  6. Pour the sauce into a blender and blend until obtaining a homogeneous sauce without any chunk.
  7. Once the potatoes have cooled, peel them and cut into pieces of about ½ inch (1,25 cm).
  8. Heat a good amount of extra virgin olive oil in a pan and fry the potatoes and whole garlic cloves over low-medium heat until golden brown. The oil must be very hot.
  9. Drain and place on paper towels to remove excess oil.
  10. Remove the garlic cloves and place the potatoes in a plate or bowl and pour the sauce over them.
