Paula’s Turkey Soup Thanksgiving 2010

Ingredients

  • 2 quarts turkey stock
  • 1 onion chopped
  • 2 talks celery chopped
  • 3 carrot sliced
  • 2 cloves garlic minced
  • handful snap peas trimmed
  • 2 cups turkey that came off the carcass, shredded meat
  • ¼ cup cilantro chopped
  • salt to taste
  • black pepper to taste

Instructions

    Cup of Yum
  1. Add all the ingredients to the turkey stock.
  2. Bring to a boil. Reduce the heat and simmer for 30-45 minutes.
  3. Taste and adjust seasonings as necessary. I found that our soup was perfect as is, but you might need to add some salt and/or pepper to yours.
