Peach Basil Mozzarella Flatbread

Peach Basil Mozzarella Flatbread Fresh peaches, basil ribbons, ricotta cheese, a drizzle of honey, fresh mozzarella all on a buttery flatbread. The perfect summer pizza!

Ingredients

  • 2 flatbreads (such as Stonefire Naan bread)
  • 1 Tablespoon extra virgin olive oil
  • 6-8 ounces fresh mozzarella (sliced)
  • 1/2 cup ricotta cheese
  • 2-3 Fresh peaches (peeled and sliced)
  • 1 Tablespoon honey
  • fresh basil leaves (chopped or cut into ribbons)
  • balsamic glaze (optional)

Instructions

  1. Preheat oven to 450 degrees. Drizzle olive oil over the flatbread. Top with fresh mozzarella and ricotta cheese. 
  2. Layer peaches all over the flatbread. Bake on baking sheet or pizza stone for 10-12 minutes or until cheese is bubbling. 
  3. Drizzle honey all over the flatbread pizza. Sprinkle with fresh basil. If so desired, drizzle balsamic glaze all over the flatbread.
