Peach Cobbler Granola
I adore this peach cobbler granola! Peach cobbler granola is made with dried peaches, peach preserves, oats, pecans, brown sugar and white chocolate chips. It's crunchy and tastes like the classic summer dessert!

Ingredients
- 6 tablespoons unsalted butter, melted
- ⅓ cup packed light brown sugar
- ⅓ cup peach preserves
- ½ teaspoon kosher salt
- 2 teaspoons pure vanilla extract
- 2 cups old-fashioned rolled oats
- 1 ½ cups pecans, chopped
- 8 dried peaches, finely chopped
- ½ cup white chocolate chips
Instructions
- Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper.
- Heat the butter, brown sugar, preserves and salt in a saucepan over medium-low heat, until the butter is melted. Whisk until everything is combined. Turn off the heat and stir in the vanilla.
- Place the oars, pecans, dried peaches and flaxseed in a large bowl. Stir together. Add the wet ingredients to the dry and toss well, until every bit is moistened and incorporated.
- Spread the granola out on the parchment paper. Bake for 35 to 40 minutes, stirring twice during cook time.
- Remove from the oven and let cool completely. Once cool, break it apart into chunks. Sprinkle with the white chocolate chips. Seal in a container or bag for a week or two!
- Serve as cereal, or as top of yogurt or by the handful.
