Peach Freezer Jam

Ingredients

  • 2 cups ripe peaches (about 3-4 medium peaches, peeled, and pit removed)
  • 3 cups granulated sugar
  • 3 tablespoons lime or lemon juice
  • 1 package no-sugar-needed fruit pectin (1.75 ounce package )
  • ¾ cup water
  • 4-5 drops orange food coloring (optional)

  1. Rinse and dry 6 half pint jars (or whatever jars you choose to use).
  2. Using a food processor or blender, pulse peaches until they are finely diced, but not completely mashed. You can do this by hand, but a food processor is usually much faster and doesn’t require as much effort. 2 cups ripe peaches
  3. Measure 2 cups of peaches and place in a large mixing bowl. Add in sugar one cup at a time, stirring well after each addition. 3 cups granulated sugar
  4. Stir in lime (or lemon) juice. Let sit for 10 minutes. 3 tablespoons lime or lemon juice
  5. While peaches are sitting, prepare pectin. In a small pan over medium-high heat, whisk together water, pectin and food color, if desired. ¾ cup water, 1 package no-sugar-needed fruit pectin, 4-5 drops orange food coloring
  6. Bring pectin to a rolling boil and set timer for 1 minute. Stir constantly for 1 minute and take off heat. Do not cook for more than 1 minute.
  7. Add hot pectin to peach mixture and stir until sugar has dissolved. This should take several minutes.
  8. Pour jam into jars. Leave ½ inch of headspace from the top of the container. Cover jam tightly with a lid and let sit at room temperature for 24 hours before refrigerating or freezing.

Notes
