Peach Gouda Honey Almond Salad

- 4 cups arugula Romaine, or Spring Mix
- 2-3 Peaches or Nectarines thinly sliced
- 5 ounces gouda cheese I used sliced gouda cheese, cut into strips, and rolled up into pinwheel
- 1/2 cup whole raw almonds
- 2 Tablespoons honey
- Pinch salt
Honey Dressing:
- 1/2 cup olive oil
- 1/3 cup Orange Vinegar or Apple Cider Vinegar
- 3 Tablespoons honey
- 1/2 teaspoon mustard
- 1/2 teaspoon salt
Instructions
- Heat small skillet over medium low heat. Add almonds and saute for 1 minute. Add honey and salt and stir to coat. Cook for 1-2 minutes longer, stirring often.
- Remove from pan and pour onto waxed paper to let cool. Set aside.
- Place greens in large salad bowl or platter. Top with fresh sliced peaches. Add cheese and honey almonds.
- In small bowl, mix vinegar, honey, mustard and salt. Drizzle in olive oil and whisk until combined.
- Drizzle on top of salad.
