Peach Gouda Honey Almond Salad

A fresh peach summer salad with greens, gouda cheese, honey almonds, and sweet honey dressing.

Ingredients

  • 4 cups arugula Romaine, or Spring Mix
  • 2-3 Peaches or Nectarines thinly sliced
  • 5 ounces gouda cheese I used sliced gouda cheese, cut into strips, and rolled up into pinwheel
  • 1/2 cup whole raw almonds
  • 2 Tablespoons honey
  • Pinch salt
  •  
Honey Dressing:
  • 1/2 cup olive oil
  • 1/3 cup Orange Vinegar or Apple Cider Vinegar
  • 3 Tablespoons honey
  • 1/2 teaspoon mustard
  • 1/2 teaspoon salt

Instructions

  1. Heat small skillet over medium low heat. Add almonds and saute for 1 minute. Add honey and salt and stir to coat. Cook for 1-2 minutes longer, stirring often.
  2. Remove from pan and pour onto waxed paper to let cool. Set aside.
  3. Place greens in large salad bowl or platter. Top with fresh sliced peaches. Add cheese and honey almonds.
  4. In small bowl, mix vinegar, honey, mustard and salt. Drizzle in olive oil and whisk until combined.
  5. Drizzle on top of salad.
