Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 3/4 cup granulated sugar
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh peaches diced

  1. Preheat the oven to 375 degrees Fahrenheit and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, mix the melted butter, sugar, milk, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  5. Gently fold in the diced peaches until evenly distributed throughout the batter.
  6. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 of the way full.
  7. Bake for 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
