Ingredients
- 2 cups old-fashioned rolled oats
- 2 1/4 cups unsweetened almond milk or other preferred milk
- 1/3 cup maple syrup
- 2 tablespoons coconut oil melted
- 1 teaspoon cinnamon
- 2 tablespoons ground flaxseed
- 2 tablespoons chia seeds
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- pinch salt
- 3 medium ripe peaches 2 chopped and one sliced for topping, divided or 1 cup of each
- 1/4 cup raw almonds chopped
Instructions
- Preheat the oven to 350ºF. In a baking dish, add oats, cinnamon, chia seeds, ground flaxseeds, salt, and baking powder. Mix to combine.
- Next, add almond milk, vanilla extract, maple syrup, coconut oil, salt and 1 cup chopped peaches. Mix everything to combine.
- Top with sliced peaches. Bake for 45-50 minutes, or until the top is golden. Over the last 10 minutes of baking, sprinkle with the chopped almonds.
- Remove the baked oatmeal from the oven and let it sit for 5-10 minutes to allow to cool before slicing into servings.
- Serve baked oatmeal with a drizzle of maple syrup or warm milk. (It’s not too sweet, so you may want to drizzle on some maple syrup.)

Notes
- Storing leftovers: Place any leftover baked oatmeal in an airtight container or wrap it in plastic wrap and store it in the fridge for up to 4 days.
- Freeze: Place individual servings in an airtight, freezer-safe container or freezer-safe bag for up to 3 months.
- Reheat: Place individual slices in the microwave for about 1 to 4 minutes, depending on whether it’s at room temperature or frozen. You can also rewarm in the oven at 350°F for 15-20 minutes.
