Peanut Brittle
Peanut Brittle is a classic candy made by boiling sugar, corn syrup, and water to a precise temperature before adding butter and peanuts. The addition of baking soda at the end creates a light, crunchy texture. Once poured onto baking sheets and cooled, it forms a brittle, sweet treat with toasted peanut bits embedded throughout. This candy is perfect for snack times or gift-giving when you want a homemade, crunchy confection.
Ingredients
- 2 cups sugar
- 1 cup light corn syrup
- 1/2 cup water
- 1 cup butter unsalted
- 2 cups peanuts unsalted
- 1 teaspoon baking soda
Instructions
- Spray 2 medium (15x10) baking sheets with vegetable oil and line with a parchment paper.
- Add the sugar, corn syrup and water in a large dutch oven on medium heat and bring to a rolling boil, stirring until the sugar is fully dissolved (5-8 minutes).
- Add the butter, stirring occasionally until it reaches 280 degrees on a candy thermometer (15-18 minutes).
- Add in the peanuts, stirring nonstop for another 8-10 minutes until it reaches 305 degrees, turn off the heat and mix in the baking soda and immediately pour onto the baking sheets to cool completely.
