Peanut Butter and Jelly Bars

Ingredients

  • 2 sticks unsalted butter (1 cup), room temperature
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract pure
  • 2 egg large
  • 2 cups peanut butter creamy
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons salt
  • 1 1/2 cups jam I used strawberry, or jelly

Instructions

  1. Preheat oven to 350 degrees F. Spray a 9x13 glass baking dish with cooking spray.
  2. With an electric mixer, cream the butter and sugar together on medium speed for about 2 minutes.
  3. Turn speed to low and add vanilla, eggs and peanut butter. Mix until well combined.
  4. In a small bowl, sift together flour, baking powder and salt. With the mixer still on low speed, slowly add in the flour mixture to the peanut butter mixture. Mix until all combined.
  5. Spread 2/3 of the dough evenly into the greased baking dish.
  6. Spread the jelly evenly over the dough. With the remaining dough, drop spoonfuls evenly over the jam. (Don't worry if it doesn't cover it completely, it will spread as it bakes.)
  7. Bake 40-45 or until golden brown. Let cool atleast 30 minutes before cutting into squares!

Notes

  • Yields: 12 large bars or 24 small
