Peanut Butter Balls Recipe

No bake energy bites are simple versatile snacks. This peanut butter ball recipe is adjustable to meet vegan, gluten-free, low carb and keto diets. Dip in melted chocolate for an extra delicious treat.

Ingredients

  • 1 cup old-fashioned oats
  • ½ cup coconut shredded
  • ½ peanut butter creamy
  • ½ cup Flaxseed ground
  • 1/3 cup chocolate chips
  • 1/3 cup honey
  • ½ tsp vanilla extract

Instructions

    Cup of Yum
  1. Stir together all the ingredients.   
  2. Scoop ingredients into 1-2 inch balls and roll with your hands.
  3. Place on a baking sheet.
  4. Chill in the refrigerator for 1-2 hours or untilcool.   
  5. Re-roll the balls to smooth edges beforeserving.

Notes

  • For easier stirring, warm the peanut butter and the sweetener in the microwave for 30 seconds, then add remaining ingredients.
  • In a hurry? For step 3 put in the freezer for 20 minutes.
