Ingredients

  • 2 banana mashed, medium, overripe
  • 1/3 cup peanut butter unsweetened, natural
  • 1/4 cup pure maple syrup
  • 2 egg large
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt sea salt
  • 1/2 cup dark chocolate chips

  1. Preheat your oven to 350°F. Line a loaf pan with parchment paper or spray it with nonstick cooking spray.
  2. In a large bowl, whisk together the mashed bananas, peanut butter, maple syrup, eggs, and vanilla until smooth.
  3. In another bowl, mix the almond flour, baking soda, cinnamon, and sea salt.
  4. Pour the dry ingredients into the wet mixture, stirring until you have a uniform batter. It's important not to overmix, and to stir gently.
  5. Fold in the chocolate chips, distributing them evenly throughout the batter.
  6. Transfer the batter to your prepared loaf pan. You can sprinkle the top with crushed peanuts, extra chocolate chips, and sea salt if desired.
  7. Slide the pan into the oven and bake for about 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for about 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
