Peanut Butter Brownie Bites
Two bite brownies packed with chocolate and peanut butter. Topped with creamy peanut butter frosting and candy!
Ingredients
For the Brownies:
- ½ cup butter unsalted
- 1 package chocolate chips 12 ounce, bittersweet, 60% cacao
- 1 cup granulated sugar
- ¾ cup all-purpose flour
- 3 egg large
- ½ teaspoon kosher salt
- 1 package peanut butter morsels 10 ounce
For the Frosting:
- ½ cup butter softened, unsalted
- 2 cups powdered sugar
- 2 Tablespoons milk
- ½ cup peanut butter creamy
- 60 Reese’s peanut butter cups in the pouch, mini
Instructions
- In a large microwave safe bowl, combine the butter with chocolate chips. Heat for one minute on high. Stir and microwave for another 30 seconds. You may need to stir and heat for one more round of 30 seconds until fully melted. Add sugar, flour, eggs and salt. Stirring until well blended. Fold in peanut butter morsels
- Lightly grease mini muffin pan with baking spray. Drop dough by large tablespoons until evenly divided into pan.
- Bake in a 375 degree oven for 12-14 minutes. Remove and cool in pan 5 minutes, then cool completely on wire rack.
- For the frosting, beat butter and powdered sugar for 3-4 minutes until smooth and fluffy. Bean in milk and peanut butter until creamy and desired consistency. Pipe frosting onto cooled brownies and top with a mini Reese's.
Notes
- I used a mini muffin pan to bake these with a round shape. A silicone brownie bites pan would be a great choice too for square brownie bites.
- Do not overmix the brownie batter. If you like your brownie bites fudgy, mix until the ingredients are just combined. The more you stir, the more cakey the finished brownies will be.
- Be sure to lightly grease or spray your muffin tin with baking spray before adding the brownie batter.
