Ingredients
- 2 slices of Ezekiel bread, toasted or any other bread you prefer
- 2 tablespoons creamy peanut butter, separated
- 4 tablespoons cottage cheese, separated
- 1 heaping cup fresh raspberries 130 grams
- Drizzle of honey
Instructions
- Spread each toasted slice of bread with one tablespoon of peanut butter. Make sure to cover the corners.
- Spread two tablespoons of cottage cheese over each toast on top of the peanut butter.
- Divide the fresh berries on top of the cottage cheese. I use whole berries, but you can crush the berries in advance and top it that way.
- Drizzle a tad of honey over the berries. A teaspoon per toast should be enough but adjust to taste.
Cup of Yum
Notes
- Variations:
- Use different fruits like blueberries or banana slices as a topping.
- Try crunchy instead of creamy peanut butter.
- Try hot honey for a spicy touch.
- Switch it up with ricotta cheese instead of cottage cheese.
- Sprinkle with extra seeds or nuts on top.
