Peanut Butter Cup Cookies
Peanut Butter Cup Cookies combine a peanut butter-flavored cookie dough baked in mini muffin molds with a chocolate-covered peanut butter cup pressed into the top while warm. This method creates a soft, tender cookie base with an added layer of creamy peanut butter and rich chocolate in every bite, perfect for peanut butter lovers wanting a portion-controlled treat.
Ingredients
- 1 ¾ cups all-purpose flour
- ½ teaspoon salt
- 1 teaspoon baking soda
- ½ cup butter softened
- ½ cup peanut butter creamy
- ½ cup granulated sugar
- ½ cup brown sugar packed
- 1 egg beaten
- 1 teaspoon vanilla extract pure
- 2 tablespoons milk
- 40 chocolate-covered peanut butter cups unwrapped, miniature
Instructions
- Preheat oven to 375°F (190°C).
- Sift together the flour, salt and baking soda; set aside.
- Cream together the butter, peanut butter, and sugars until fluffy.
- Beat in the egg, vanilla and milk. Add the flour mixture; mix well.
- Use a small cookie scoop to scoop equal portions of dough into 40 wells in an ungreased mini muffin pan.
- Bake for 8-10 minutes until just set. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.
