Peanut Butter Eggs

These fun Easter treats are part candy, part cookie, and delicious all over!

Ingredients

  • 1 cup creamy peanut butter
  • 1 ½ cups powdered sugar
  • ½ cup Graham cracker crumbs
  • ¼ teaspoon salt
  • 8 ounces dark chocolate or milk chocolate, good quality

Instructions

  1. In a bowl, combine peanut butter, powdered sugar, graham crumbs, and salt. Mix with a hand mixer until combined.
  2. Scoop a generous tablespoons of dough and roll into a ball. Gently flatten and shape it into an egg shape. Repeat with all dough. Place on the prepared pan and chill for 20 minutes.
  3. Meanwhile, melt the chocolate in the microwave at 50% power, stirring every 30 seconds until smooth.
  4. Working quickly, dip each peanut butter egg into the chocolate to coat, allow excess to drip off and place it on a clean piece of parchment paper.
  5. Refrigerate 30 minutes or until set. Drizzle with additional chocolate if desired.

Notes

  • Do not overheat the chocolate. Remove from heat before it is completely melted and continue to stir until it is completely melted.
  • Store in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 2 weeks, and in the freezer for up to 3 months.
