Peanut Butter Granola

Peanut butter granola is the most delicious way to start your day! Rolled oats get tossed in a peanut butter, brown sugar, and honey mixture, then are baked to perfection. You're going to love having them on hand to much on in the morning or as a snack throughout the day!

Ingredients

  • 2 cups old fashioned rolled oats
  • ½ cup peanuts
  • 1 teaspoon cinnamon
  • Dash of Salt
  • ¼ cup peanut butter, melted
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons brown sugar
  • ¼ cup honey
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 325 degrees Fahrenheit and line a baking sheet pan with parchment paper.
  2. In a large bowl, add 2 cups old fashioned rolled oats, ½ cup peanuts, 1 teaspoon cinnamon, and dash of salt. Toss to combine.
  3. In a medium saucepan, add ¼ cup peanut butter, 2 tablespoons brown sugar, ¼ cup honey, and 2 tablespoons coconut oil,. Heat over medium heat and stir until melted and combined. Remove from the heat and stir in 1 teaspoon vanilla.
  4. Pour the melted peanut butter mixture over the oat mixture. Stir to coat the ingredients well.
  5. Spread on the prepared baking sheet pan in an even layer.
  6. Bake for 20-30 minutes, stirring every 10 minutes. The granola should be toasted and lightly browned.
  7. Remove from the oven and allow the granola to cool on the pan.
  8. Break up the granola, then store it in an airtight container.
