Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter softened, unsalted
  • 1 cup peanut butter creamy
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 1 egg large
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats old-fashioned
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, and salt in a bowl.
  3. In a separate bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until smooth. Beat in the egg and vanilla extract.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined, then fold in the oats and chocolate chips.
  5. Drop tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly browned. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
