Ingredients

  • 9 cups popped popcorn approximately 3 bags
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup peanut butter
  • 1 tsp vanilla extract

Instructions

    Cup of Yum
  1. Place the popcorn in a large bowl and then set aside.
  2. Heat the light corn syrup and sugar in a large saucepan over medium high heat.  Stir the mixture together constantly so that the sugar does not burn and bring the mixture to a low boil. Then allow the mixture to boil for approximately 2 minutes.
  3. Then remove from heat and stir in the peanut butter and the vanilla extract.  Once fully combined, drizzle the peanut butter mixture over the popcorn and gently toss the popcorn to coat it with the peanut butter sauce.
  4. Then pour the popcorn on a baking sheet lined with parchment paper or wax paper and allow for it to cool (approximately 10-20 minutes).
  5. Then the popcorn is ready to serve and enjoy!

Notes

  • Store the leftovers in an airtight container at room temperature for up to 1 week.
  • Do not boil the corn syrup mixture for longer than 2 minutes as it will be hardened and difficult to work with so watch it closely as it cooks.
