- 16 cups poppers popcorn (or about 1/2 cup of kernels, popped)
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup peanut butter
- 1 teaspoon vanilla extract
Instructions
- Pop the popcorn, place in a large bowl, and set aside
- Combine the sugar and the corn syrup in a medium saucepan. Set over medium heat and bring to a boil. Boil for 2 minutes. Remove from the heat.
- Add the peanut butter, and stir to combine. Stir in the vanilla.
- Pour the mixture over the popcorn and stir to coat.
Cup of Yum
Notes
- *Make sure you don't cook the mixture more than 2 minutes. It will become too thick, and it will be hard to stir into the popcorn. If it is too hard to stir in, that means you cooked the mixture too long. You just need to dissolve the sugar, so reduce cooking time if you are having problems.
