Peanut Butter Protein Bars

These no bake peanut butter protein bars are so easy to make and taste so much better than store-bought! Each bar packs 14 grams of protein!

Ingredients

  • 2 cups old fashioned rolled oats
  • ½ cup vanilla protein powder I used Sunwarrior
  • ¼ teaspoon sea salt
  • 2 Tablespoon chia seeds
  • 1 cup drippy peanut butter I used Wild Friends
  • ⅓ cup maple syrup
  • 1 teaspoon vanilla
  • 1-2 Tablespoons almond milk plus more as needed
  • ⅓ cup mini chocolate chips

Instructions

  1. Line a 8x8 pan with parchment paper.
  2. Combine all ingredients, except for almond milk and chocolate chips in a large mixing bowl. The mixture may seem too thick at first, but it will come together as you keep mixing. Use your hands to help. Add almond milk as needed.
  3. Fold in chocolate chips
  4. Press mixture into prepared pan. Let bars chill in the refrigerator for at least one hour before cutting.
  5. Remove bars from the fridge, cut into 10 equal-sized bars and enjoy.
  6. Bars will last about one week in the fridge or up to 3 months in the freezer.
