Peanut Butter Protein Pudding
This peanut butter protein pudding is made with Greek yogurt and peanut butter powder. It's thick, creamy and packed with over 30 grams of protein!
Ingredients
- 1 cup Greek yogurt I used whole milk
- 3 Tablespoons powdered peanut butter PB2 powder
- 1 Tablespoon milk
- 1 teaspoon vanilla extract
- 1-2 teaspoons maple syrup or 5-6 drops of stevia, to taste
- chocolate chips for topping
- peanuts for topping
Instructions
- Combine all ingredients in a bowl and whisk to combine until smooth and no clumps remain.
- Top with a drizzle of peanut butter, crushed peanuts, and chocolate chips.

- Powdered peanut butter: If you don’t have powdered peanut butter, regular peanut butter works well too. Just note that it will make the pudding thicker. Start with 2 tablespoons and adjust to taste. You can also use a whey-based peanut butter protein powder instead. - Make it dairy-free: For a dairy-free option, try plant-based yogurt option. These won't have as much protein as greek yogurt, but I love the siggi's plain plant based yogurt, which has 11 grams of protein per serving.
- Have a peanut allergy? Feel free to use powdered almond butter, regular almond butter, cashew butter, tahini or sunflower seed butter instead.
