Peanut Butter Truffle Brownies
Peanut Butter Truffle Brownies layer a rich chocolate brownie base with a creamy peanut butter filling and a glossy chocolate topping. The brownies are softly baked to a tender texture, then topped with a smooth peanut butter cream made from butter, creamy peanut butter, powdered sugar, and water. A final melted chocolate and butter ganache adds a shiny finishing layer.
Ingredients
Brownie:
- 1/2 cup butter melted, unsalted
- 1 cup sugar
- 2 large egg
- 2 teaspoons vanilla extract
- 1/3 cup cocoa powder unsweetened
- 1/2 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
Peanut Butter Filling
- 1/2 cup butter softened, unsalted
- 1/2 cup peanut butter creamy
- 2 cups powdered sugar
- 1 tablespoon water
Chocolate Topping:
- 1 cup semisweet chocolate chips
- 1/4 cup butter unsalted
Instructions
- Preheat oven to 350 degrees.
- Spray an 8x8 inch baking pan with baking spray.
- Whisk together melted butter, sugar, eggs, and vanilla extract.
- Whisk in the cocoa powder, flour, salt, and baking powder.
- Spread batter evenly into greased baking pan.
- Bake for 25 to 30 minutes then let cool for 20 minutes.
- To your stand mixer add the butter and peanut butter on medium speed until creamy.
- On low speed add in powdered sugar and water until creamy.
- Spread mixture over the brownies evenly.
- In a microwave-safe bowl add the chocolate chips and butter and microwave on 50% power in 30 second increments until completely melted.
- Stir the chocolate and butter mixture for 1 minute until the mixture is glossy.
- Spread chocolate evenly over the peanut butter filling.
- Refrigerate for 30 minutes before slicing and serving.
