Ingredients

  • 1 tablespoon olive oil
  • 1 1/2 pounds chicken breast cut into bite-sized pieces, boneless, skinless
  • 1/4 cup peanut butter creamy
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated, fresh
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup chicken broth
  • 1 tablespoon lime juice
  • Steamed rice for serving
  • 1/4 cup cilantro for garnish, chopped
  • 1/4 cup peanut for garnish, chopped

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 6-8 minutes.
  2. In a bowl, whisk together peanut butter, soy sauce, honey, minced garlic, grated ginger, red pepper flakes, chicken broth, and lime juice until smooth.
  3. Pour the peanut sauce over the cooked chicken in the skillet. Reduce heat to medium and let simmer for 5 minutes, allowing the sauce to thicken slightly.
  4. Serve the peanut chicken over steamed rice, garnished with chopped cilantro and peanuts.
